Kathleen’s AWESOME peanut butter, chocolate chip cookie recipe

1 cup butter
1 cup peanut butter (I use creamy style)
1-1/2 cups granulated sugar
1-1/2 cups brown sugar (packed)
2 tsp. vanilla extract (pure tastes best; imitation works well)
4 eggs
4-1/2 cups flour
2 tsp. baking soda
2 tsp. salt
1 12-oz package of your favorite chocolate chips (can use ½ chocolate; ½ peanut butter chips)
Preheat oven to 375 degrees.
Mix flour, baking soda, and salt in a large bowl and set aside. Cream butter, peanut butter, granulated sugar, brown sugar and vanilla until creamy. Add eggs one at a time until thoroughly mixed. Gradually add flour mixture to the creamy mixture (I add about one cup at a time) until all flour mixture has been added and is well blended. Stir in (by hand) your chocolate chips until evenly mixed.
Drop by spoonful (I use a tablespoon) onto ungreased cookie sheet (about an inch apart). Bake at 375 degrees for about 7-9 minutes. You will need to adjust baking time according to your oven. I try not to overbake so they are not crispy.
*You can substitute vanilla extract for almond extract if you want a little different flavor.
This recipe has been doubled. I get anywhere from 5-6 dozen cookies (depending on size of cookie). If you don’t want as many cookies, you can halve the recipe.
Healthy Chocolate Chip Cookies

Ingredients
1 ½ Cups Flour
¾ Cup Whole Wheat Flour
¼ Cup Buckwheat Flour
2 Tbsp Ground Flax Seed
1 tsp Baking Soda
½ tsp Salt
2 Sticks Butter
¾ Cup Brown Sugar, packed
½ Cup Granulated Sugar
¼ Cup Honey
1 tsp Vanilla
2 Eggs
2 Cups (1 bag) Semi-sweet Chocolate Chips
¾ Cup Chopped Pecans, optional
Directions
- 1. Preheat oven to 375 degrees
- 2. Mix the dry ingredients (flour to salt) and set aside.
- 3. Cream together the butter, brown sugar, granulated sugar, honey, and vanilla. Add eggs and mix until smooth.
- 4. Add the dry ingredients and thoroughly blend.
- 5. Mix in the chocolate chips and pecans.
- 6. Bake for 9-10 minutes. Allow to cool for 2-3 minutes before transferring them to a wire rack. Makes 48 cookies.
**2 extra Tbsp of flour will make cookies puffier.
